Broccoli rabe is blanched, then sautéed with garlic and a dried chile for a simple, flavorful side dish.

  • 2 tablespoons olive oil
  • 1 garlic clove, thinly sliced

  • 1½ tablespoons salt
  • 1 bunch broccoli rabe (about 1 pound), stems peeled, if desired
  • 2 tablespoons olive oil
  • 1 garlic clove, thinly sliced
  • (1 small dried red chile pepper)
  • Salt and black pepper

Let's Cook

  1. Step 1.

    Bring 4 quarts water to a rolling boil in a large pot and add: 1½ tablespoons salt

  2. Step 2.

    Meanwhile, cut into 1-inch pieces: 1 bunch broccoli rabe (about 1 pound), stems peeled, if desired

  3. Step 3.

    Add to the boiling water and boil for 2 minutes, then drain and cool slightly. Squeeze the moisture out of the leaves. Heat in a large skillet over medium heat: 2 tablespoons olive oil

  4. Step 4.

    Add: 1 garlic clove, thinly sliced; (1 small dried red chile pepper)

  5. Step 5.

    Add the broccoli rabe and cook, stirring occasionally, until tender, about 4 minutes. Remove and discard the chile. Season to taste with: Salt and black pepper
