Let's Prepare

Collect

Gather these ingredients — no prep needed yet.

  • 2 green chillies
  • 1 tsp salt
  • 5 tbsp sugar
  • 4 tbsp mustard oil

Prepare

  • 2 green mangoes, peeled and flesh roughly chopped

Let's Cook

  1. Step 1.

Place the peeled and roughly chopped green mango flesh in a food processor along with the 2 green chillies. Blitz until the mixture is roughly chopped, with some texture remaining.

  2. Step 2.

Transfer the chopped mango and chilli mixture to a mixing bowl. Add 1 teaspoon of salt and half of the sugar (about 2.5 tablespoons). Stir well to combine.

  3. Step 3.

Stir in the 4 tablespoons of mustard oil until fully incorporated. Taste the chutney and adjust seasoning: add more sugar if it tastes too sharp, or more salt if needed, balancing the sourness of the green mango.

  4. Step 4.

Transfer the chutney to a sterilized jar, seal, and store in the refrigerator. It will keep for up to 4 days.
