Step 1.
In a large bowl or dish, crack 3 eggs and beat them. Add 2 cups whole milk, 1 tablespoon brown sugar, 1 tablespoon granulated sugar, 2 teaspoons vanilla extract, 2 teaspoons ground cinnamon, and ¼ teaspoon ground nutmeg. Stir until well combined, then pour in ¼ cup melted unsalted butter and stir again.

Add 1 to 2 slices of French toast bread or thick-sliced bread to the milk-and-egg mixture. Let each slice soak for about 10 seconds, then flip to coat the other side briefly. Remove and let excess drip off.

Spray a large skillet or griddle with nonstick cooking spray and place over medium heat. Once hot, add 2 to 4 soaked bread slices at a time. Cook until the bottom is golden brown, about 2–3 minutes, then flip and cook the other side until golden brown, another 2–3 minutes. Serve immediately with melted butter, maple syrup, powdered sugar, or your favorite toppings.
