Let's Cook

  1. Step 1.

    Warm a frying pan over medium heat. Add the prepared turkey and cook until heated through, about 2-3 minutes, then add the spinach and cook until wilted, about 1 minute.

  2. Step 2.

    In a bowl, whisk the egg and egg whites with a pinch of chilli flakes and black pepper. Pour into the pan with the turkey and spinach. Scramble over medium heat, stirring gently, until just set, about 2-3 minutes.

  3. Step 3.

    While the eggs cook, warm the whole-wheat wrap in a separate dry pan or microwave for a few seconds until pliable.

  4. Step 4.

    Lay the warm wrap on a plate. Spoon the turkey-egg mixture down the center. Top with tomato, crumbled feta, and smoky red-pepper yogurt.

  5. Step 5.

    Fold the sides of the wrap over the filling and roll tightly to enclose. Place the wrap seam-side down in the pan and toast over medium heat until golden and crisp on both sides, about 1-2 minutes per side.

  6. Step 6.

    Slice in half and serve immediately.
