- 2 cup hulled sesame seeds
- 1/4 cup avocado oil or extra-virgin olive oil

Step 1.
In a medium saucepan over low heat, toast the 2 cups hulled sesame seeds for a few minutes, stirring frequently, until fragrant and starting to turn slightly golden. Turn off the heat.

Transfer the toasted sesame seeds to a high-speed blender or food processor. Blend on high for 8 to 10 minutes, scraping the sides frequently with a spatula, until a paste forms.

With the blender running, drizzle in ¼ cup avocado oil or extra-virgin olive oil and continue to blend on high for 3 to 4 minutes, until the tahini is smooth and creamy.

Pour the tahini into an airtight container and store in the refrigerator for up to 4 weeks. If the tahini separates, stir well to reincorporate before using.
