  • 14.8 ml packed brown sugar
  • 7.39 ml olive oil
  • ground cinnamon
  • cayenne
  • Kosher salt and pepper
  • 29.6 ml grated Parmesan

Prepare

  • 454 g small sweet potatoes, cut into ¾-inch-thick wedges

Let's Cook

  1. Step 1.

    Preheat the oven to 375°F. In a medium bowl, combine 1 tablespoon packed brown sugar, ½ tablespoon olive oil, ⅛ teaspoon ground cinnamon, a pinch of cayenne, ¼ teaspoon kosher salt, and ⅛ teaspoon black pepper. Stir until well mixed.

  2. Step 2.

    Add the sweet potato wedges to the bowl and sprinkle with 1 tablespoon grated Parmesan. Toss everything together until the wedges are evenly coated.

  3. Step 3.

    Arrange the sweet potatoes in a single even layer on a large rimmed baking sheet. Sprinkle the remaining 1 tablespoon grated Parmesan over the top.

  4. Step 4.

    Roast the sweet potatoes, rotating the baking sheet halfway through, until they are deep golden brown and tender, 50 to 60 minutes. Serve immediately.
