- 1 can 15¼-ounce can peach halves, drained and cut into 1-inch pieces
- 1/2 cup fresh flat-leaf parsley, roughly chopped
Let's Cook
-
Step 1.
Using a vegetable peeler, remove 2 strips of zest from the orange. Thinly slice the zest and set aside. Juice the orange into a 5- to 6-quart slow cooker (you should have about ½ cup). Whisk in the brown sugar, vinegar, ¾ teaspoon salt, and ¼ teaspoon pepper.
-
Step 2.
Toss the chicken pieces with the flour in a bowl until evenly coated. Add the chicken to the slow cooker along with the smashed garlic cloves and the sliced orange zest. Scatter the red onion wedges over the top. Cover and cook until the chicken is cooked through and the sauce has slightly thickened, 7 to 8 hours on low or 5 to 6 hours on high.
-
Step 3.
Transfer the cooked chicken to a platter and keep warm. Add the drained and cut peach pieces to the slow cooker, cover, and cook until heated through, about 3 minutes. Fold in the chopped parsley. Spoon the peach and onion mixture over the chicken and serve with cooked long-grain white rice.
