- 1½ pounds sunchokes
- 3 tablespoons butter
- 2 garlic cloves, minced
- 2 tablespoons chopped parsley
- 1 tablespoon lemon juice
- Salt and black pepper to taste

Step 1.
Wash, peel, and cut into 1-inch pieces: 1½ pounds sunchokes

Steam or boil in well-salted water until tender. Test with a fork after 15 minutes. Drain.

Meanwhile, melt in a small skillet: 3 tablespoons butter

Add and cook until fragrant but not browned: 2 garlic cloves, minced
