  • 1 tsp salt
  • finely grated zest of 1 lemon
  • 2 tbsp sumac
  • 4 lamb leg steaks

Prepare

  • Crush 1 clove garlic
  • salad, to serve

Let's Cook

  1. Step 1.

    Preheat the grill/broiler to high and line a grill pan with foil.

  2. Step 2.

    In a bowl, combine 2 tbsp olive oil, 1 crushed garlic clove, 1 tsp salt, finely grated zest of 1 lemon, and 2 tbsp sumac. Mix well. Brush the mixture onto both sides of 4 lamb leg steaks, then place them on the prepared grill pan.

  3. Step 3.

    Grill/broil the steaks for 4–5 minutes on each side, until golden brown and beginning to char.

  4. Step 4.

    Remove the steaks from the grill and let them rest for a few minutes. Serve hot with salad alongside.
