Prepare

  • Beat 2 large eggs
  • Melt 118 ml butter
  • 2 plums, 1 chopped and 1 thinly sliced, divided

  1. Step 1.

    Preheat the oven to 400°F. Line 18 muffin-pan cups with paper liners.

    In a large bowl, whisk together 1¼ cups all-purpose flour, 1 cup whole-wheat flour, ⅓ cup raw white quinoa, 1½ teaspoons baking powder, 1 teaspoon ground cinnamon, ½ teaspoon ground ginger, ½ teaspoon baking soda, and ½ teaspoon salt.

  3. Step 3.

    In a medium bowl, whisk 2 large beaten eggs, 1 cup plain full-fat yogurt, ½ cup melted butter, and ½ cup honey until smooth. Fold the egg mixture into the flour mixture until just combined (do not overmix), then gently stir in the chopped plum.

  4. Step 4.

    Divide the batter evenly among the prepared muffin cups, using about ¼ cup per cup. Top each muffin with a couple of slices from the thinly sliced plum.

  5. Step 5.

    Bake for 15 to 20 minutes, until a toothpick inserted into the center of a muffin comes out clean. Let the muffins cool in the pans for 5 minutes, then transfer them to a wire rack to cool completely.
