  • 118 ml apricot jam
  • 59.1 ml ketchup
  • 29.6 ml reduced-sodium soy sauce
  • 1.23 ml red pepper flakes
  • cooked long-grain white rice
  • scallions
  • sesame seeds

Prepare

  • 14.8 ml fresh ginger, grated peeled
  • Trim 907 g boneless, skinless chicken thighs
  • Chop 1 medium onion
  • 2 garlic cloves, finely chopped
  • 1 red bell pepper, sliced into ¼-inch pieces

Let's Cook

  1. Step 1.

    In a 5- to 6-quart slow cooker, combine the apricot jam, ketchup, soy sauce, grated ginger, and red pepper flakes. Add the chicken thighs, chopped onion, and finely chopped garlic; toss everything together to coat evenly.

  2. Step 2.

    Scatter the sliced red bell pepper over the top of the chicken mixture. Cover the slow cooker and cook until the chicken is cooked through and tender, 5 to 6 hours on low or 3 to 4 hours on high.

  3. Step 3.

    Serve the chicken and sauce over cooked long-grain white rice. Sprinkle with sliced scallions and sesame seeds if desired.
