  • 29.6 ml avocado oil
  • 9.86 ml dried basil

Prepare

  • Slice pre-cooked sausage
  • Dice 1 medium yellow onion

Let's Cook

  1. Step 1.

    Heat a large skillet over medium heat and add enough oil to coat the bottom. Once the oil shimmers, add the diced potatoes in an even layer. Cook for 5 minutes, stirring occasionally, until they begin to soften and brown slightly.

    Add the diced onion, minced garlic, and your chosen spices to the skillet with the potatoes. Stir to combine and cook for another 5 minutes, stirring occasionally, until the onions are translucent and the sweet potatoes are nearly fork-tender.

    Stir the sliced sausage into the skillet, adding a little more oil if the pan looks dry. Cook for 2 minutes, stirring, until the sausage is heated through and starting to brown.

    Add the spinach to the skillet and fold it into the mixture with a spatula. Continue folding as the spinach wilts, about 3 minutes, until it is fully wilted but still bright green.

  5. Step 5.

    Once the sausage is hot, the potatoes are cooked through, and the spinach is wilted, remove the skillet from the heat. Top with any optional garnish and serve.
