- Soften 59.1 ml unsalted butter
- 118 ml cold unsalted butter, shredded on a cheese grater

Preheat the oven to 400°F. Lightly grease a 9-by-13-inch baking dish with softened butter.

In the bowl of a stand mixer fitted with the dough hook, combine 2 cups self-rising flour, 2 tablespoons sugar, 1 tablespoon unsweetened cocoa powder, ½ teaspoon cream of tartar, and ⅛ teaspoon kosher salt. Whisk until well combined.

Add ¾ cup cold buttermilk, ½ cup cold unsalted butter (shredded on a cheese grater), ¼ cup butter-flavored vegetable shortening, 1 teaspoon vanilla extract, and a few drops of red food coloring (about 8 drops) to the dry ingredients. Mix on medium speed until a red dough forms, about 2 minutes.

Lightly flour a work surface and rolling pin. Turn the dough out and roll it to ½ inch thick. Fold the dough into quarters to create layers, then flatten again to about ½ inch thick.
