  • 1/4 cup water or milk of choice

Prepare

  • Vegetable oil, for frying
  • 6 pineapple rings, ⅓-inch-thick
  • Confectioners’ sugar, for dusting

Let's Cook

  1. Step 1.

    Prepare the chosen dough as directed, adding ¼ cup water or milk of choice at room temperature, and stir until the mixture resembles a thick pancake batter. Let the batter rest.

  2. Step 2.

    While the batter is resting, pour vegetable oil into a heavy-bottomed pot to a depth of at least 2 inches and heat over medium-high heat until a deep-fat thermometer registers 360°F.

  3. Step 3.

    Dip each pineapple ring into the batter, allowing excess to drip off, and carefully place into the hot oil. Fry for about 2 minutes per side, until the batter puffs and turns a rich caramel color.

  4. Step 4.

    Remove the fritters with a slotted spoon and transfer to a wire rack set over paper towels to drain. Serve while still warm, dusted with confectioners' sugar.
