Lowcountry SEA Island RED PEAS
Sea Island red peas are heirloom field peas with a nutty flavor, simmered with vegetables and spices until tender. Serve over rice or with fried chicken for a hearty Southern meal.

Prepare
- Dice 1 small sweet onion
- Dice 1 rib celery
- Dice 1 small carrot
- 1 small jalapeño, seeded and diced
- Chop 2 cloves garlic
- Chop 29.6 ml fresh thyme

Step 1.
In a large saucepan over medium-high heat, heat 3 tablespoons extra-virgin olive oil until shimmering. Add 1 diced small sweet onion (½ cup), 1 diced rib celery (½ cup), 1 diced small carrot (¼ cup), and 1 seeded and diced small jalapeño. Sauté until the vegetables begin to soften, 5 to 6 minutes.

Step 2.
Add 2 chopped cloves garlic and sauté until fragrant but not brown, 1 to 2 minutes more.

Step 3.
Add 2 cups Sea Island red peas, 4 cups chicken or vegetable stock, 2 tablespoons hot sauce (such as Texas Pete or Crystal), 2 tablespoons Worcestershire sauce, 2 tablespoons chopped fresh thyme, and 1 bay leaf. Bring to a simmer.

Step 4.
Reduce heat to medium-low and simmer until the peas are soft, 1½ to 2 hours. Season to taste with kosher salt and freshly ground black pepper.

Serve warm, topped with chowchow.
