  • 1 quart chicken or vegetable stock
  • 2 tbsp Texas Pete or Crystal hot sauce
  • 2 tbsp Worcestershire sauce
  • 1 bay leaf

Prepare

  • Dice 1 small sweet onion
  • Dice 1 rib celery
  • Dice 1 small carrot
  • 1 small jalapeño, seeded and diced
  • Chop 2 cloves garlic
  • Chop 2 tbsp fresh thyme

Let's Cook

  1. Step 1.

    In a large saucepan over medium-high heat, heat 3 tablespoons extra-virgin olive oil until shimmering. Add 1 diced small sweet onion (½ cup), 1 diced rib celery (½ cup), 1 diced small carrot (¼ cup), and 1 seeded and diced small jalapeño. Sauté until the vegetables begin to soften, 5 to 6 minutes.

  2. Step 2.

    Add 2 chopped cloves garlic and sauté until fragrant but not brown, 1 to 2 minutes more.

  3. Step 3.

    Add 2 cups Sea Island red peas, 4 cups chicken or vegetable stock, 2 tablespoons hot sauce (such as Texas Pete or Crystal), 2 tablespoons Worcestershire sauce, 2 tablespoons chopped fresh thyme, and 1 bay leaf. Bring to a simmer.

  4. Step 4.

    Reduce heat to medium-low and simmer until the peas are soft, 1½ to 2 hours. Season to taste with kosher salt and freshly ground black pepper.

  5. Step 5.

    Serve warm, topped with chowchow.
