Gather these ingredients - no prep needed yet.
- 2 cups kumquats
- 2 cups water
- 1 cup sugar
- (½ vanilla bean, split lengthwise)

Step 1.
Combine in a saucepan with water to cover: 2 cups kumquats

Bring to a boil, then drain. Slice the kumquats into rings and remove any seeds. Combine in a medium saucepan: 2 cups water; 1 cup sugar; (½ vanilla bean, split lengthwise)

Bring to a boil over medium-high heat. Add the kumquats and simmer until tender and the sugar is dissolved, about 5 minutes. Scoop out the kumquats and transfer to a bowl. Boil to reduce the syrup by half. Strain the syrup over the kumquats, cover, and refrigerate until chilled.
