A refreshing salad of jicama, cucumber, oranges, radishes, and red onion tossed in lime juice, seasoned with chili powder and cilantro.

Ingredients

  • 1 medium jicama (about 1 pound)
  • 2 small cucumbers, peeled, halved lengthwise, and seeded
  • 3 medium navel oranges
  • 6 radishes, thinly sliced
  • 1 small red onion, thinly sliced
  • ⅓ cup lime juice
  • Salt
  • 2 teaspoons chili powder
  • ⅓ cup chopped cilantro

Gather these ingredients - no prep needed yet.

  • 1 medium jicama (about 1 pound)
  • 2 small cucumbers, peeled, halved lengthwise, and seeded
  • 3 medium navel oranges
  • 6 radishes, thinly sliced
  • 1 small red onion, thinly sliced
  • ⅓ cup lime juice
  • Salt
  • 2 teaspoons chili powder
  • ⅓ cup chopped cilantro

Let's Cook

  1. Step 1.

    Peel and cut into matchsticks: 1 medium jicama (about 1 pound)

  2. Step 2.

    Cut crosswise into ¼-inch-thick slices: 2 small cucumbers, peeled, halved lengthwise, and seeded

  3. Step 3.

    Cut both ends off: 3 medium navel oranges

  4. Step 4.

    Stand the oranges on a cutting board and cut away the peel and all the white pith and outer membrane. Halve lengthwise, then cut crosswise into ¼-inch-thick slices. Toss the jicama, cucumbers, and oranges in a large bowl along with: 6 radishes, thinly sliced; 1 small red onion, thinly sliced; ⅓ cup lime juice

  5. Step 5.

    Let stand for 20 minutes, then season to taste with: Salt

  6. Step 6.

    Spoon the salad and juices onto a platter. Top with: 2 teaspoons chili powder; ⅓ cup chopped cilantro
