About 1 cup An umami-rich glaze for salmon, duck breast, pork loin, or chicken. For Miso Glaze, omit the soy sauce and substitute ¼ cup red or white miso for the hoisin sauce and ¼ cup sake for the wine.

- 2 tablespoons honey or brown sugar
- 2 tablespoons Shaoxing wine or dry sherry
- 2 tablespoons rice vinegar

- 1-inch piece ginger, peeled and minced or grated on a rasp grater
- 2 garlic cloves, minced or grated on a rasp grater
- (1 teaspoon toasted sesame oil)
