About 1 cup An umami-rich glaze for salmon, duck breast, pork loin, or chicken. For Miso Glaze, omit the soy sauce and substitute ¼ cup red or white miso for the hoisin sauce and ¼ cup sake for the wine.

Ingredients

  • ½ cup hoisin sauce
  • (2 tablespoons chile garlic paste or sriracha)
  • 2 tablespoons honey or brown sugar
  • 2 tablespoons Shaoxing wine or dry sherry
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1-inch piece ginger, peeled and minced or grated on a rasp grater
  • 2 garlic cloves, minced or grated on a rasp grater
  • (1 teaspoon toasted sesame oil)

    Whisk to combine in a small bowl: ½ cup hoisin sauce; (2 tablespoons chile garlic paste or sriracha); 2 tablespoons honey or brown sugar; 2 tablespoons Shaoxing wine or dry sherry; 2 tablespoons rice vinegar; 1 tablespoon soy sauce; 1-inch piece ginger, peeled and minced or grated on a rasp grater; 2 garlic cloves, minced or grated on a rasp grater; (1 teaspoon toasted sesame oil)
