Grilled Scallops WITH Honey Butter
Jumbo sea scallops are seasoned with a sweet rub, grilled to perfection, and drizzled with smoked honey butter. A quick and elegant seafood dish.

- 1 lb jumbo sea scallops, rinsed and patted dry

Step 1.
Prepare a grill for direct and indirect cooking. If using a charcoal grill, arrange coals for two zones; if using gas, preheat one side to high and leave the other off.

Rinse 1 pound jumbo sea scallops (preferably diver scallops) under cold water and pat them dry thoroughly with paper towels.

Season the scallops liberally on both sides with 1 tablespoon Sweet Rub.

Grill the scallops over direct high heat (if scallops are small, place a plancha or cast-iron pan on the grill grates first) for 3 to 4 minutes without moving them, until a golden crust forms. Flip and cook for another 3 to 4 minutes, until the internal temperature reaches 130°F (about 54°C). Remove from the grill.

Step 5.
While the scallops are grilling, place a small cast-iron skillet on the coolest part of the grill (indirect zone) and add 2 tablespoons Smoked Honey Butter. Heat until just melted, then remove from the grill.

Arrange the grilled scallops on a serving dish, drizzle the melted Smoked Honey Butter over them, and sprinkle with a pinch of finishing salt.
