This green cardamom extract captures the essence of Indian dessert kitchens. It is made by steeping green cardamom pods and cardamom tea bags in boiling water, then straining after 12 hours. Perfect for use in cocktails and sweet dishes.

Let's Cook

Step 1.
Place 100g (3½oz) green cardamom pods and 3 cardamom tea bags in a small mixing bowl. Pour boiling water over them to cover, then stir with a spoon. Let stand for 5 minutes.

After 5 minutes, add more boiling water to the bowl until you have 1 litre (35fl oz/4¼ cups) of liquid total. Stir briefly.

Cover the bowl and let it steep for 12 hours at room temperature.

After steeping, strain the liquid through a fine-mesh sieve or cheesecloth into a clean container, discarding the solids. Transfer the extract to an airtight container and store in the refrigerator for up to 1 month.
