- 1 cucumber, peeled, halved lengthwise, seeded, sliced into half moons

Step 1.
Peel the cucumber, then halve it lengthwise. Use a spoon to scrape out the seeds, then slice the cucumber into half-moon shapes about 1/4-inch thick.

Place the cucumber slices in a small bowl. Pour enough distilled white vinegar over them to completely cover the slices.

Season the cucumbers with freshly ground black pepper to taste—about seven turns of a pepper mill. Stir gently to combine.

Refrigerate the bowl of cucumbers until well chilled, at least 30 minutes or until cold. While they chill, prepare the rest of your meal.
