  • 1 head radicchio
  • 59.1 ml plain nonfat Greek yogurt
  • 44.4 ml finely grated Parmesan cheese
  • 44.4 ml lemon juice
  • 4.93 ml Dijon mustard
  • 237 ml unseasoned croutons

Prepare

  • 3 clove garlic, pressed, divided

Let's Cook

  1. Step 1.

    In a large bowl, toss the shrimp with 1 tablespoon olive oil, 1 teaspoon lemon zest, 1 teaspoon hot paprika, two-thirds of the pressed garlic, and ⅛ teaspoon salt until evenly coated.

    Thinly slice the romaine lettuce and radicchio crosswise into thin strips and place them in a large serving bowl.

    In a small bowl, whisk together the Greek yogurt, finely grated Parmesan cheese, lemon juice, Dijon mustard, the remaining pressed garlic, and ¼ teaspoon each salt and pepper until smooth. Set the dressing aside.

  4. Step 4.

    Preheat the air fryer to 400°F. Lightly spray or brush the air fryer basket with olive oil. Working in 2 batches, arrange the shrimp in a single layer in the basket and air fry until opaque throughout, about 3 minutes per batch.

  5. Step 5.

    While the shrimp are cooking, pour the dressing over the sliced lettuce and radicchio in the serving bowl and toss to coat evenly.

  6. Step 6.

    Top the dressed salad with the cooked shrimp and 1 cup unseasoned croutons. Serve immediately.
