Step 1.
Slice the beef thinly. Combine soy sauce, gochujang, honey, garlic and ginger. Marinate the beef briefly in the mixture. Sear the beef in a very hot pan until caramelised. Stir-fry mushrooms and edamame with sesame oil. Toss cucumber and carrot with rice vinegar. Mix Greek yogurt with a small amount of gochujang for the protein sauce. Place jasmine rice into a large bowl. Arrange BBQ beef, mushrooms, edamame, kimchi and crunchy vegetables around the rice. Drizzle with spicy protein sauce. Finish with sesame seeds and spring onion.
