Crispy Pan-Roasted Pork Belly

6 to 8 servings Pork belly roasted with the rind on is a memorable treat. The thicker, meatier end of the pork belly is ideal here. If your knife is not sharp enough to score the skin, a box cutter fitted with a fresh blade works well. Preheat the oven to 375°F.

Ingredients

  • One 2-pound portion pork belly, skin attached
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon minced rosemary or thyme and ½ teaspoon minced lemon zest, or 1 teaspoon five-spice powder
  • 1 teaspoon vegetable oil or lard
  • 1
    • 1½ tablespoons salt
    • 1 bunch broccoli rabe (about 1 pound), stems peeled, if desired
    • 2 tablespoons olive oil
    • 1 garlic clove, thinly sliced
    • (1 small dried red chile pepper)
    • Salt and black pepper
    Sub-recipe steps
    1. Bring 4 quarts water to a rolling boil in a large pot and add: 1½ tablespoons salt
    2. Meanwhile, cut into 1-inch pieces: 1 bunch broccoli rabe (about 1 pound), stems peeled, if desired
    3. Add to the boiling water and boil for 2 minutes, then drain and cool slightly. Squeeze the moisture out of the leaves. Heat in a large skillet over medium heat: 2 tablespoons olive oil
    4. Add: 1 garlic clove, thinly sliced; (1 small dried red chile pepper)
    5. Add the broccoli rabe and cook, stirring occasionally, until tender, about 4 minutes. Remove and discard the chile. Season to taste with: Salt and black pepper

Let's Cook

  1. Step 1.

    Pat dry: One 2-pound portion pork belly, skin attached

  2. Step 2.

    Using a very sharp knife, slice through the skin at ½-inch intervals in a crosshatch pattern; try not to cut into the meat underneath. Mix together in a bowl: 1 teaspoon salt; ½ teaspoon pepper; ½ teaspoon minced rosemary or thyme and ½ teaspoon minced lemon zest, or 1 teaspoon five-spice powder

  3. Step 3.

    Sprinkle both sides of the pork belly with this mixture, rubbing it into the crevices of the cut skin. Heat in a large ovenproof skillet over medium heat: 1 teaspoon vegetable oil or lard

  4. Step 4.

    Place the belly in the skillet skin side down and cook until the skin is golden, about 5 minutes. Carefully slide a thin spatula underneath the belly so that the skin does not stick to the skillet. Turn the belly skin side up and transfer the skillet to the oven. Roast until a thermometer inserted in its thickest part registers 180°F, about 1 hour. Cut into thick slabs and serve with: Garlic-Braised Broccoli Rabe and Mashed Potatoes
