Line a rimmed baking sheet with parchment paper and stretch the pieces of skin out on the parchment, making sure the pieces do not overlap. Lightly sprinkle each piece of skin with: A pinch of salt and black pepper

Avoid the temptation to generously season the skin—a little salt goes a long way here. Place another sheet of parchment paper over the skin and nest a rimmed baking sheet on top so the pieces are pressed flat. Bake until the skin is golden brown and crisp, about 40 minutes.
