4 to 6 servings A Chinese-American creation everyone can love. We like the mouthwatering combination of savory chicken, sweet mandarin oranges, crunchy peanuts and chow mein noodles, and refreshing napa cabbage.

  • 4 cups thin strips cooked chicken (about 1 ½ pounds)
  • One 11-ounce can mandarin oranges packed in juice, drained and juice reserved
  • 6 green onions, thinly sliced
  • ½ cup reserved mandarin orange juice
  • ¼ cup vegetable oil
  • 2 tablespoons lemon or lime juice
  • 1 tablespoon soy sauce
  • 2 teaspoons toasted sesame oil
  • 1-inch piece ginger, peeled and minced
  • 1 teaspoon dry mustard
  • (½ teaspoon red pepper flakes)
  • ½ teaspoon salt, or to taste

Let's Cook

  1. Step 1.

    Combine in a large bowl: 4 cups thin strips cooked chicken (about 1 ½ pounds); One 11-ounce can mandarin oranges packed in juice, drained and juice reserved; 6 green onions, thinly sliced

    Whisk together well in a small bowl: ½ cup reserved mandarin orange juice; ¼ cup vegetable oil; 2 tablespoons lemon or lime juice; 1 tablespoon soy sauce; 2 teaspoons toasted sesame oil; 1-inch piece ginger, peeled and minced; 1 teaspoon dry mustard; (½ teaspoon red pepper flakes); ½ teaspoon salt, or to taste; (½ teaspoon ground Sichuan pepper or Five-Spice Powder)

    Toss enough dressing with the chicken mixture to moisten. Taste and adjust the seasonings. Serve over: 4 cups shredded napa cabbage (about 12 ounces)

    Top with: 1 cup chow mein noodles; 1 cup chopped roasted unsalted peanuts or ¾ cup sliced almonds, toasted; (1 tablespoon toasted sesame seeds)
