Chinese Chicken Salad
4 to 6 servings A Chinese-American creation everyone can love. We like the mouthwatering combination of savory chicken, sweet mandarin oranges, crunchy peanuts and chow mein noodles, and refreshing napa cabbage.
Ingredients
- 4 cups thin strips cooked chicken (about 1 ½ pounds)
- One 11-ounce can mandarin oranges packed in juice, drained and juice reserved
- 6 green onions, thinly sliced
- ½ cup reserved mandarin orange juice
- ¼ cup vegetable oil
- 2 tablespoons lemon or lime juice
- 1 tablespoon soy sauce
- 2 teaspoons toasted sesame oil
- 1-inch piece ginger, peeled and minced
- 1 teaspoon dry mustard
- (½ teaspoon red pepper flakes)
- ½ teaspoon salt, or to taste
- 1 (½ teaspoon ground Sichuan pepper or Five-Spice Powder) (opens in new tab)
- 4 cups shredded napa cabbage (about 12 ounces)
- 1 cup chow mein noodles
- 1 cup chopped roasted unsalted peanuts or ¾ cup sliced almonds, toasted
