Chicken souvlaki is a Greek-inspired dish featuring tender chicken cubes marinated in a blend of spices, garlic, olive oil, and vinegar, then grilled or skewered. Perfect for a hearty dinner.

Ingredients

Servings:
  • 4 chicken breasts
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tsp ground cumin
  • 1 tsp allspice
  • 1 tsp dried thyme
  • 2 tsp dried oregano
  • 1 garlic clove crushed
  • 2 tbsp extra virgin olive oil
  • 2 tsp white wine vinegar
  • Freshly cracked black pepper
    • 1 whole cucumber
    • salt

    • 8 9/11 oz Greek yogurt
    • extra virgin olive oil
    • 1 garlic clove crushed
    • black pepper
    • dill
    Sub-recipe steps
    1. Grate the cucumber (peeled or unpeeled) and place in a bowl. Add a pinch of salt and a splash of white wine vinegar, then stir to combine. Cover the bowl with a clean tea towel and let it sit for about 15 minutes to draw out moisture.
    2. While the cucumber rests, in a separate bowl, mix together the Greek yoghurt, olive oil, minced garlic, salt, pepper, and chopped dill until well combined.
    3. After the cucumber has released its liquid, gather the grated cucumber in the tea towel and squeeze firmly over the sink to remove as much moisture as possible. Add the squeezed cucumber to the yoghurt mixture and stir until evenly incorporated.
    4. Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
    • 14 1/9 oz self-raisin flour
    • 14 1/9 oz Greek yogurt
    • 2 tbsp extra virgin olive oil
    • 1 pinch salt
    • 2 tsp Dried oregano
    • 2 tsp Rosemary
    • 1 pinch Chilli flakes
    Sub-recipe steps
    1. Mix all the ingredients together until a dough forms.
    2. Transfer to a floured work surface and knead for around 5 minutes, adding a little flour if necessary until smooth and firm.
    3. Roll into a long sausage shape before dividing into equal portions.
    4. Roll each piece into a ball and then roll out into flatbreads.
    5. Separate each one with greaseproof paper and refrigerate until you're ready to cook.
    6. Cook over direct charcoal for around 1 minute per side until puffed up with beautiful char marks. A hot griddle pan works equally well indoors.

Prepare

  • Crush 1 garlic clove

Let's Cook

  1. Step 1.

    Cut the chicken into roughly 1-inch cubes and place them in a bowl.

  2. Step 2.

    In a separate small bowl, mix together the salt, sugar, cumin, allspice, thyme, oregano, and crushed garlic. Add the olive oil, white wine vinegar, and plenty of cracked black pepper, and stir to combine into a marinade.

  3. Step 3.

    Pour the marinade over the chicken cubes and massage well into every piece, ensuring all surfaces are coated.

  4. Step 4.

    Cover the bowl with plastic wrap or a lid and refrigerate for at least 2–3 hours, or overnight for best flavor. While the chicken marinates, you can prepare any side dishes or clean up.
