  • 1/2 cup mayonnaise
  • 2 tbsp extra-virgin olive oil
  • 1 1/2 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 1/4 tsp kosher salt
  • 3/4 tsp pepper
  • 8 butterhead lettuce

Prepare

  • Chop 3 tbsp scallions
  • Chop 2 tbsp fresh dill
  • Shred 1 whole rotisserie chicken
  • Chop 8 cooked bacon
  • Toast 8 bread
  • Slice 3 tomatoes

Let's Cook

  1. Step 1.

    In a large bowl, whisk together the mayonnaise, chopped scallions, olive oil, fresh dill, cider vinegar, Dijon mustard, salt, and pepper until well combined.

  2. Step 2.

    Add the shredded cooked chicken and chopped bacon to the dressing, and stir until everything is evenly coated.

  3. Step 3.

    Arrange lettuce leaves on 4 slices of toasted bread. Top evenly with sliced tomatoes, then sprinkle with the remaining salt and pepper.

    Spoon the chicken salad mixture over the tomatoes, dividing it evenly among the sandwiches.

    Top each sandwich with the remaining toasted bread slices, and serve immediately.
