Charlaine’s Very Unsophisticated Supper Dip
A hearty, savory dip made with ground chicken, beans, tomatoes, and spices, simmered for an hour and served with tortilla chips and cheese.
Ingredients
- 2 lbs ground chicken
- 3/4 cup onion chopped
- 2 tbsp chili powder
- 1 pack dry ranch dressing mix
- 1/2 cup taco seasoning
- 2 cans charro beans undrained
- 1 can black beans drained
- 1 can Ro-Tel diced tomatoes and green chilies
- 1 can tomato paste
- 1/2 lbs tomato sauce
- 1 cup red wine
- shredded cheddar or Monterey Jack cheese
- sturdy tortilla chips

Prepare
- Chop 3/4 cup onion
- 2 cans charro beans, undrained
- Drain 1 can black beans

Step 1.
In a deep skillet over medium-high heat, brown the ground chicken (or beef) with the chopped onion, breaking up the meat with a spoon, until no longer pink. Sprinkle generously with chili powder and stir to combine.

Transfer the cooked meat mixture to a 3-quart pot. Add the dry ranch dressing mix, taco seasoning, undrained charro beans, drained black beans, Ro-Tel diced tomatoes and green chilies, tomato paste, tomato sauce, and red wine. Stir everything together until well combined.

Cover the pot and bring the mixture to a gentle simmer over medium-low heat. Let it simmer for at least 1 hour, stirring occasionally. If the dip becomes too thick during simmering, add a splash more red wine or tomato sauce to thin it out.

While the dip simmers, you can prepare toppings: shred cheddar or Monterey Jack cheese and set out sturdy tortilla chips. When ready to serve, ladle the hot dip into bowls, sprinkle generously with shredded cheese, and scoop up with tortilla chips.
