Broiled Ham Steak

8 ounces ham per person A delicious treatment for brine-cured ham. To use country ham, reduce its saltiness as suggested in Country Ham Steak with Red-Eye Gravy. Adjust an oven rack so it is 3 inches below the heating element and preheat the broiler.

- ¼ cup grape jelly, melted
- 1 tablespoon lemon juice
- 1 teaspoon dry mustard

Slash in several places the fat edge of: 1 ham steak, about 1 inch thick

Place it on a broiler pan and broil for 10 minutes on each side, or until browned. If desired, glaze the ham toward the end of cooking with a mixture of: ¼ cup grape jelly, melted; 1 tablespoon lemon juice; 1 teaspoon dry mustard
