Toss in a bowl with: 2 to 2½ pounds shell-on shrimp (preferably 26⁄30 or larger), deveined, above

When the oil just barely starts to smoke, add the shrimp in a single layer and cook, turning once, until the shells turn pink and the flesh is opaque, about 1 minute per side. Serve with: Lemon wedges
