    Prepare: Cajun Blackening Spice

    Toss in a bowl with: 2 to 2½ pounds shell-on shrimp (preferably 26⁄30 or larger), deveined, above

  3. Step 3.

    Turn on an exhaust fan and open a window. Heat in a large skillet over high heat: 2 tablespoons vegetable oil

  4. Step 4.

    When the oil just barely starts to smoke, add the shrimp in a single layer and cook, turning once, until the shells turn pink and the flesh is opaque, about 1 minute per side. Serve with: Lemon wedges
