A crisp salad of bitter greens, tart apple slices, and toasted pecans, lightly dressed with a buttermilk-honey dressing.

Ingredients

    • ¼ cup rice vinegar
    • ¼ cup sour cream
    • ¼ cup buttermilk
    • 2 to 3 tablespoons honey, to taste
    • 1 garlic clove, minced or grated on a rasp grater
    • 1 green onion, minced
    • Pinch of cayenne pepper
    • ½ teaspoon salt
    • ¼ teaspoon black pepper
    • ½ cup olive oil
    Sub-recipe steps
    1. Whisk together in a small bowl: ¼ cup rice vinegar; ¼ cup sour cream; ¼ cup buttermilk; 2 to 3 tablespoons honey, to taste; 1 garlic clove, minced or grated on a rasp grater; 1 green onion, minced; Pinch of cayenne pepper; ½ teaspoon salt; ¼ teaspoon black pepper
    2. Add in a slow, steady stream, whisking constantly: ½ cup olive oil
    3. Use immediately, or refrigerate for up to 5 days.
  • 4 cups loosely packed arugula leaves
  • 1 small head radicchio, torn into bite-sized pieces
  • 2 Belgian endives, cored, leaves sliced lengthwise into strips
  • 1 Granny Smith or other tart apple, cored and very thinly sliced
  • ½ cup pecan halves, toasted and chopped

  • 1 Buttermilk-Honey Dressing
  • 4 cups loosely packed arugula leaves
  • 1 small head radicchio, torn into bite-sized pieces
  • 2 Belgian endives, cored, leaves sliced lengthwise into strips
  • 1 Granny Smith or other tart apple, cored and very thinly sliced
  • ½ cup pecan halves, toasted and chopped

Let's Cook

  1. Step 1.

    Prepare: Buttermilk-Honey Dressing

  2. Step 2.

    Combine in a salad bowl: 4 cups loosely packed arugula leaves; 1 small head radicchio, torn into bite-sized pieces; 2 Belgian endives, cored, leaves sliced lengthwise into strips

  3. Step 3.

    Add just enough dressing to the greens to lightly moisten them and toss to coat. Divide the greens among salad plates. Add to the salad bowl: 1 Granny Smith or other tart apple, cored and very thinly sliced

  4. Step 4.

    Moisten the apple slices with more dressing, toss, and scatter over the salads, along with: ½ cup pecan halves, toasted and chopped
