Benedictine Sandwiches
About 1 ½ cups These sandwiches are traditionally served at festivities surrounding the Kentucky Derby. They are made even better by the addition of thinly shaved country ham (and accompanied by a Mint Julep).

Gather these ingredients — no prep needed yet.
- 1 medium cucumber, peeled and seeded
- ½ medium onion
- 8 ounces cream cheese, softened
- Pinch of cayenne pepper
- ¼ teaspoon salt
- (Dab of green food coloring)
- 12 slices white bread, crusts removed

Step 1.
Grate on the large holes of a box grater: 1 medium cucumber, peeled and seeded; ½ medium onion

Step 2.
Wrap in a kitchen towel and squeeze to remove excess moisture. Transfer to a medium bowl and add: 8 ounces cream cheese, softened; Pinch of cayenne pepper; ¼ teaspoon salt; (Dab of green food coloring)

Mix together with a wooden spoon until fluffy. Have ready: 12 slices white bread, crusts removed

Step 4.
Spread the cream cheese mixture on half the bread slices and top with the remaining bread. Cut in half for rectangles, in quarters for small squares, or on the diagonal for triangles.
