  • 4 quinces
  • Softened butter
  • 1 cup packed brown sugar
  • ⅓ cup dry bread or cake crumbs
  • ¼ cup chopped toasted walnuts
  • Finely grated zest of 1 lemon
  • ¼ teaspoon salt

Let's Cook

  1. Step 1.

Preheat the oven to 350°F. Wash, halve, and core: 4 quinces

  2. Step 2.

    Rub generously with: Softened butter

  3. Step 3.

Place in a baking dish, cover, and bake until just tender when pierced with a knife. Check after 1 hour and if the flesh is still very firm, continue baking and checking for up to 1 more hour. Remove from the oven (but leave the oven on). Scoop out most of the flesh, reserving the rinds for presentation. Mix the flesh with: 1 cup packed brown sugar; ⅓ cup dry bread or cake crumbs; ¼ cup chopped toasted walnuts; Finely grated zest of 1 lemon; ¼ teaspoon salt

  4. Step 4.

Stuff the quince shells with the mixture. Return to the oven and bake until tender, about 15 minutes more. Serve hot or chilled.
