Bagel Breakfast Bake
A savory breakfast casserole made with toasted everything bagels, eggs, cheese, bacon, and scallions. It's assembled ahead and baked until golden and set.

- 4 everything bagels, toasted and chopped
- Shred 113 g Monterey Jack cheese
- 4 cooked bacon, finely chopped
- Slice 4 scallions

Arrange the toasted and chopped everything bagels in a single layer in a 2- to 2½-quart baking dish.

In a large bowl, whisk together the eggs, milk, shredded Monterey Jack cheese, finely chopped cooked bacon, sliced scallions, ½ teaspoon salt, and ¼ teaspoon pepper until well combined.

Pour the egg mixture evenly over the bagels in the baking dish. Gently press down on the bagels with a spatula to help them absorb the liquid. Cover the dish with plastic wrap or a lid and refrigerate for at least 1 hour or up to overnight.
