  • 6 large eggs
  • 2 cup milk
  • Kosher salt and pepper

Prepare

  • 4 everything bagels, toasted and chopped
  • Shred 4 oz Monterey Jack cheese
  • 4 cooked bacon, finely chopped
  • Slice 4 scallions

Let's Cook

  1. Step 1.

    Arrange the toasted and chopped everything bagels in a single layer in a 2- to 2½-quart baking dish.

  2. Step 2.

    In a large bowl, whisk together the eggs, milk, shredded Monterey Jack cheese, finely chopped cooked bacon, sliced scallions, ½ teaspoon salt, and ¼ teaspoon pepper until well combined.

  3. Step 3.

    Pour the egg mixture evenly over the bagels in the baking dish. Gently press down on the bagels with a spatula to help them absorb the liquid. Cover the dish with plastic wrap or a lid and refrigerate for at least 1 hour or up to overnight.

  4. Step 4.

    When ready to bake, preheat the oven to 350°F. Remove the dish from the refrigerator, uncover, and bake for 45 to 55 minutes, until the casserole is set in the center and lightly golden on top. A knife inserted near the center should come out clean.

  5. Step 5.

    Let the baked casserole cool for 15 minutes before serving. Sprinkle with additional sliced scallions for garnish.
