Yuca With Citrus And Garlic

Tender boiled yuca dressed with citrusy garlic mojo and fresh herbs. A bright, garlicky Cuban-style side dish.

Ingredients

Servings:
  • 3 pounds yuca
  • ½ teaspoon salt
  • 1
    • ½ cup olive oil
    • 8 garlic cloves, minced
    • 1 cup sour orange juice, or ½ cup orange juice and ½ cup lime juice
    • 1 tablespoon minced fresh oregano or 1 teaspoon dried oregano
    • ¾ teaspoon ground cumin
    • ½ teaspoon salt
    • ¼ teaspoon black pepper
    Sub-recipe steps
    1. Heat in a medium saucepan over medium heat: ½ cup olive oil
    2. Add and cook until fragrant but not browned, 20 to 30 seconds: 8 garlic cloves, minced
    3. Carefully stir in and bring to a boil: 1 cup sour orange juice, or ½ cup orange juice and ½ cup lime juice; 1 tablespoon minced fresh oregano or 1 teaspoon dried oregano; ¾ teaspoon ground cumin; ½ teaspoon salt; ¼ teaspoon black pepper
    4. Reduce the heat to simmer gently for 10 minutes. Let cool and serve at room temperature.

Gather these ingredients - no prep needed yet.

  • 3 pounds yuca
  • ½ teaspoon salt
  • 1 Mojo
  • Chopped cilantro
  • Chopped green onion
  • Salt to taste

Let's Cook

  1. Step 1.

    Cut into 3-inch sections, peel, halve lengthwise, and core, above: 3 pounds yuca

  2. Step 2.

    Cut the yuca into ½-inch-thick slices or cubes. Rinse well and place in a pot of cold water to cover. Add: ½ teaspoon salt

  3. Step 3.

    Bring to a boil, then reduce the heat, cover, and simmer until the yuca is easily pierced with a fork, 15 to 20 minutes. Meanwhile, prepare: Mojo

  4. Step 4.

    When the yuca is tender, drain well and transfer to a serving bowl. Add the mojo to taste (you do not need to let the mojo cool before adding to the yuca) along with: Chopped cilantro; Chopped green onion; Salt to taste

  5. Step 5.

    Serve immediately.
