  • 4 oz thick-cut bacon
  • 2 cup low-sodium chicken broth
  • 1/2 cup dry white wine
  • 3 tbsp tomato paste
  • 4 sprig fresh thyme
  • 1/2 cup dried brown lentils
  • crusty bread

Prepare

  • 8 clove garlic, peeled and smashed
  • Chop 1 medium onion
  • Drain 1 petite diced tomatoes
  • 2 lb lean pork butt, trimmed and cut into 2-inch pieces
  • Rinse 1 small white beans

Let's Cook

  1. Step 1.

    Place bacon on a paper towel-lined plate and microwave on High until crisp, about 4 minutes. Cut into 1-inch pieces.

  2. Step 2.

    In a 5- to 6-quart slow cooker, whisk together chicken broth, white wine, and tomato paste until smooth. Add garlic, onion, and drained diced tomatoes; stir to combine.

  3. Step 3.

    Fold in pork pieces, thyme sprigs, and bacon pieces, ensuring they are submerged in the liquid.

  4. Step 4.

    Cover and cook on High for 5 to 6 hours or on Low for 7 to 8 hours, until the pork is tender and easily pulls apart with a fork.

  5. Step 5.

    Thirty-five minutes before serving, discard the thyme sprigs. Gently stir in the lentils. Keep the slow cooker on High, cover, and continue cooking until the lentils are just tender, 30 to 35 minutes.

  6. Step 6.

    Gently fold in the rinsed white beans and cook, covered, until heated through, about 3 minutes. Serve with crusty bread if desired.
