  • 473 ml mango chunks
  • 29.6 ml shredded coconut

Prepare

  • 2 bananas, broken into chunks

Let's Cook

  1. Step 1.

Preheat the oven to 140°F (or its lowest setting). Line a rimmed baking sheet with plastic wrap, ensuring the wrap is smooth and taut.

  2. Step 2.

In a blender, combine 2 cups mango chunks, 2 bananas broken into chunks, and 2 tablespoons shredded coconut. Blend until completely smooth, scraping down the sides as needed.

  3. Step 3.

Pour the fruit pulp onto the prepared baking sheet. Use a spatula to spread it evenly into a thin layer, aiming for at least ⅛ inch thickness. It's fine if the pulp doesn't reach the edges; avoid making it too thin to prevent brittleness.

  4. Step 4.

Place the baking sheet in the oven. Check periodically (every 30–60 minutes) to monitor drying and let moisture escape by briefly opening the oven door. The leather is done when it is dry to the touch and peels away from the plastic wrap, typically taking 3 to 10 hours depending on thickness and oven. Watch for browning at the edges; if it starts to brown, remove immediately.

  5. Step 5.

Once dried, remove the fruit leather from the oven and let it cool completely on the baking sheet. Then peel it off the plastic wrap and cut into desired shapes or roll up for storage.
