  • 1 clove
  • 4.93 ml Assam tea
  • 125 ml whole milk
  • 14.8 ml sugar

Prepare

Let's Cook

  1. Step 1.

    Place the green cardamom pods, clove, and peeled, roughly chopped ginger in a mortar and pestle. Grind to a coarse paste, then set aside.

  2. Step 2.

    Bring 150ml (5 fl oz / generous ½ cup) of water to a boil in a small pan. Add the spice paste and let it boil for 2 minutes. Reduce the heat to low, add the Assam tea, and simmer for 2–5 minutes, depending on how strong you like your tea.

  3. Step 3.

    Add the milk and sugar to the pan and simmer for another 2 minutes. Taste the chai and add more sugar if desired. Strain through a fine-mesh strainer into a cup and serve hot.
