Step 1.
Prepare the New York Style Sautéed Onions according to your recipe; these are thick with tomato paste and spices. Set aside.

Split open a classic hot dog bun. Panfry an all-beef hot dog (preferably with natural casing for a juicy bite) on a flattop or in a skillet over medium heat, turning occasionally, until heated through and lightly charred, about 5 minutes.

During the last minute of cooking the hot dog, place the split bun cut-side down on the flattop or in the skillet to lightly toast.

Place the cooked hot dog into the toasted bun. Slather a generous amount of spicy brown mustard along the dog.
