Step 1.
Preheat the oven to 475°F.

In a large bowl, sift together 2 cups flour, 2½ teaspoons baking powder, and ½ teaspoon salt.

Cut ⅓ cup shortening into the flour mixture using a fork or pastry cutter until the mixture resembles coarse cornmeal.

Add ¾ cup milk to the flour-shortening mixture. Blend with a fork or pastry cutter just until the flour is moistened and the dough pulls away from the bowl. Do not overmix.

Turn the dough out onto a lightly floured surface. Roll the dough to ¾ inch thick, then knead for 30 seconds. Cut into biscuits using a 2-inch cookie cutter or the open end of a drinking glass.

Place the biscuits on an ungreased baking sheet. Bake for 12 to 15 minutes, until golden brown. Serve warm.
