    In a small saucepan, combine ½ cup honey, 3 tablespoons water, and ½ teaspoon cracked black pepper. Bring to a simmer over medium heat, stirring occasionally, until the honey is fully dissolved, about 2–3 minutes. Remove from heat and let the syrup cool completely, about 15–20 minutes. Once cool, strain through a fine-mesh sieve into a jar or bottle to remove the pepper solids. You should have a generous ½ cup of syrup; store in a cool, dry place for up to 1 month.

    Fill a cocktail shaker with ice. Add 4 ounces gin, 2 ounces fresh lemon juice, and 2 tablespoons of the honey-pepper syrup. Shake vigorously for about 15 seconds until well chilled. Strain the cocktail into two coupe glasses. If desired, sprinkle a pinch of cracked black pepper over the top of each drink for garnish. Serve immediately.
