Let's Cook

  1. Step 1.

    Reheat the chicken and turkey separately so both retain their texture. You can do this in the microwave on medium power in 30-second intervals, or in a covered skillet over low heat with a splash of water, until each is warmed through but not dry. Set them aside and keep warm.

  2. Step 2.

    While the proteins reheat, heat the cooked rice, roasted vegetables, and broccoli. Warm the rice in a saucepan or microwave until steaming, and reheat the roasted vegetables and broccoli in a separate pan or microwave until hot, about 3–5 minutes. If needed, steam the broccoli until tender-crisp.

  3. Step 3.

    Add the heated rice to a large bowl, spreading it in an even layer as the base.

  4. Step 4.

    Arrange the warmed chicken on one side of the bowl and the turkey on the other, keeping them separate.

  5. Step 5.

    Fill the remaining sections of the bowl with the heated roasted vegetables and broccoli, placing them around the proteins.

  6. Step 6.

    Add the avocado slices or chunks on top or to one side of the bowl.

  7. Step 7.

    Drizzle the lemon-herb yogurt over one protein (e.g., the chicken) and the smoky red-pepper yogurt over the other (e.g., the turkey).

  8. Step 8.

    Finish with a squeeze of lime or lemon juice and a sprinkle of fresh parsley or coriander. Serve immediately.
