  • 3/8 lbs rigatoni
  • 2 tbsp olive oil
  • Kosher salt and pepper
  • 1/2 tbsp fresh lemon juice

Prepare

  • 1 small shallot, halved and thinly sliced
  • 3/4 lbs zucchini and summer squash, thinly sliced into half-moons
  • Grate 1 1/2 oz Pecorino Romano cheese
  • 3 tbsp fresh mint, thinly sliced

Let's Cook

  1. Step 1.

    Bring a medium pot of water to a boil. Cook the rigatoni according to the package directions. Reserve ½ cup of the pasta cooking liquid, then drain the pasta.

  2. Step 2.

    While the pasta cooks, heat 2 tablespoons olive oil in a large, deep skillet over medium heat. Add the sliced shallot and cook, stirring occasionally, until golden brown, 3 to 4 minutes.

  3. Step 3.

    Add the thinly sliced zucchini and summer squash to the skillet along with ¼ teaspoon each salt and pepper. Cook, tossing occasionally, until the squash is very tender but still holds its shape, 10 to 12 minutes.

  4. Step 4.

    Add the drained pasta to the skillet with the squash. Toss with 1½ ounces grated Pecorino Romano cheese and ¼ cup of the reserved pasta cooking liquid, adding more liquid if the pasta seems dry, until a sauce forms that coats the pasta.

  5. Step 5.

    Fold in 3 tablespoons thinly sliced fresh mint and ½ tablespoon fresh lemon juice. Serve immediately, topped with additional cheese and pepper if desired.
