Step 1.
In a medium bowl, whisk together 1⅔ cups flour, ½ teaspoon baking powder, and ¼ teaspoon salt. Set aside.

In a large bowl, beat 1 stick of softened butter with ¾ cup sugar until light and fluffy, about 2 minutes. Add 1 egg and 1 teaspoon vanilla, and beat until combined.

Gradually add the dry ingredients to the butter mixture, beating on low speed until a smooth dough forms. Do not overmix.

Shape the dough into a disk, wrap tightly in plastic wrap, and refrigerate for at least 2 hours, or until firm enough to roll.

Preheat oven to 325°F. On a lightly floured surface, roll the dough to about ¼-inch thickness. Cut into desired shapes and place on ungreased baking sheets, spacing about 1 inch apart.

Bake for 12–15 minutes, until edges are lightly browned. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before decorating with Cookie Icing.
