Skirt steak and colorful bell peppers are air-fried to perfection, then served in warm flour tortillas with sour cream and cilantro. A quick and flavorful weeknight dinner.

  • 2 tbsp lime juice
  • 1/4 tsp ground cumin
  • 1 tbsp canola oil
  • 2 tsp canola oil
  • 1/2 tsp granulated garlic

Prepare

  • 1 large red bell pepper, quartered lengthwise, then sliced crosswise
  • 1 large yellow bell pepper, quartered lengthwise, then sliced crosswise
  • 1 large red onion, sliced ¼ inch thick

  • 3/4 lbs skirt steak, cut crosswise into 4-inch pieces

  • Chop 1/4 cup fresh cilantro

Let's Cook

  1. Step 1.

    In a large bowl, toss the sliced peppers and onion with lime zest and juice, cumin, 1 tablespoon canola oil, 1/4 teaspoon granulated garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper until well coated.

  2. Step 2.

    Heat the air fryer to 400°F. Place the seasoned peppers and onions in the air fryer basket and cook for 10 minutes, shaking the basket occasionally to ensure even cooking.

  3. Step 3.

    While the vegetables cook, rub the steak pieces with the remaining 2 teaspoons canola oil, then season with ancho chili powder, the remaining 1/4 teaspoon granulated garlic, and 1/2 teaspoon each salt and pepper.

  4. Step 4.

    After 10 minutes, push the vegetables to one side of the air fryer basket and add the seasoned steak to the other side. Air fry for 10 minutes for medium-rare doneness, flipping the steak once halfway through.

  5. Step 5.

    Transfer the cooked steak to a cutting board and let it rest for at least 5 minutes before slicing against the grain. Meanwhile, toss the air-fried vegetables with 1/4 cup chopped cilantro.

  6. Step 6.

    Warm the flour tortillas. Fill each tortilla with sliced steak and the pepper-onion mixture, then top with sour cream. Sprinkle with additional cilantro and serve with lime wedges if desired.
